Tapas have been the restaurant rage in recent years.
Tapas come from Spain and one of the most popular Spanish tapas is called a Torta- It's an egg and potato dish that's similar to a frittata.
Tortas are simple to prepare and make a great brunch or lunch dish.
The secret to my quick and easy Torta is using packaged potato wedges, which helps get this Torta on the table quickly.
I've begun the recipe by cooking some sliced onion in a little olive oil until caramelized.
In the same skillet, add a little olive oil and cook the potatoes, stirring often, until they begin to brown on both sides.
While the potatoes brown, I'll whisk up some eggs which I'll season with salt and pepper.
Stir the onions into the potatoes and then pour the eggs over the top.
Jiggle the pan to evenly distribute the eggs and then cook until the edges are beginning to brown.
Now just pop it into the stove.
After ten minutes the Torta is read to serve.
Just flip it onto a plate or platter, cut into wedges and serve.
The Torta can be served hot or at room temperature.
