Are you tired of the same old cuisine?

You don't have to travel thousands of miles to sample a dish from India?

All you have to do is try Karin Calloway's recipe for Indian inspired Chicken Curry.

It's today's Quick Cooking.

My husband and I discovered Indian food when we traveled to England and we were hooked. 

I've mastered many of our favorites at home, and this week's Indian-Inspired Chicken Curry is a combination of two of my favorites- Chicken Tika Masal and Butter Chicken. 

The two dishes are similar, with a tomato-based sauce that's not too spicy. 

I've begun the recipe by grilling some lemon-and-spice-marinated chicken breasts.

The sauce begins by sautéing up a combination of pureed onion, ginger and garlic until it becomes golden brown.

You might think that the ingredients for an Indian-inspired meal at home would be hard to find, but you can actually get everything right at your favorite supermarket.  '

Garam Masala-a spice blend commonly used in Indian cooking is available on the spice aisle, and the remaining spices are just ground cardamom, cayenne pepper and ground coriander seeds.

Stir the spices into the onion mixture along with some chopped jalapeno and sauté for a minute.  Now, complete the sauce by adding chicken broth, half and half, some bay leaves and a little butter.

The sauce simmers for 15 minutes, then you add the diced chicken and simmer 15 minutes more.  Serve over hot basmati rice for a delicious Indian meal at home.
