Today on Quick Cooking, Karin Calloway whips up a very special version of Mac and Cheese.
My son is a huge fan of my macaroni and cheese, so I rarely stray from the version he loves.
However, my daughter's favorite mac and cheese is a white cheddar version served at a national fast-casual chain restaurant.
I decided to recreate it at home and now this week's White Cheddar Skillet Mac and Cheese is the one I prepare when C.C. comes home from college.
It comes together quickly - in under 30 minutes.
I'll begin by preparing a white sauce.
I've got some bubbly melted butter and now I'll whisk in some flour. Now, whisk in some milk and simmer until the mixture is thickened.
The white sauce takes about ten minutes to thicken up, so I use the simmer time to shred two blocks of white cheddar cheese.
Add three-fourths of the cheese to the thickened white sauce, along with some Worcestershire sauce, salt, pepper and dry mustard. Stir in some cooked macaroni, along with the remaining cheddar.
The mac and cheese is ready to serve immediately but if you want to make it ahead you can spread it
baking dish and reheat it in the oven. Serve as a side dish or a delicious vegetarian entree.
